Fatima's Veggie & Meat Soup


  • 3 medium red bell peppers

  • 2 onions

  • ½ cup of Nigerian palm oil

  • Assorted meat

  • Efo

  • Yuro

  • Spicy chilli pepper

  • 3 tablespoons of ground crayfish and salt

  • Dried catfish and stockfish

  • 1 tablespoon Iru

  • Maggi seasoning stock

For the meat

  • Dry thyme

  • Paprika

  • Black pepper

  • Curry thyme

  • Maggi star


  1. Boil the assorted meat seasoned with the selected spices and herbs – add Maggi Seasoning stock to the broth and onions – with a handful of salt

  2. Cover for 20-25 minutes with all ingredients to boil

  3. Soften and boil dry fish separately for 5-10 minutes

  4. Chop Efo into fine smaller pieces

  5. Add fish to the boiled meat once it has been softened

  6. Add a generous amount Nigerian palm oil into another pot and begin to heat up

  7. Add ground crayfish to the oil mixture with 1 tablespoon of Iru – let it simmer for 10 minutes

  8. Add spice to the oil (curry thyme, paprika and black pepper, all-purpose spices and Maggi star)

  9. Add all the meat and fish to the oil – stir to mix meats

  10. Leave to cook for 5 to 10 minutes before adding the vegetables

  11. Once adding the vegetables mix, cover the top and leave everything to simmer

  12. Reduce the heat once everything has simmered.
